SUMMARY

The Cook prepares and serves food to residents of Heritage of Webster County following corporate standards and guidelines to assure that quality food service is provided at all times.

This position complies with department and organization-wide policies, long-term care facility requirements, safety, and infection control, and all Federal and State of Nebraska regulations related to the performance of Heritage of Webster County operations and requirements of the compliance program.

ESSENTIAL DUTIES AND RESPONSIBILITIES

Reviews menus prior to food preparation.

Prepares meals in accordance with planned menus, including items that are palatable and appetizing in appearance.

Ensures food and supplies for upcoming meals are readily available.

Assists in inventorying, dating, and storing food and supplies.

Recommends equipment and supply needs of department to Dietary Supervisor.

Ensures all opened food in refrigerator/freezer is covered and labeled with date and time.

Posts changes to menus as necessary and in a timely manner.
Assists in serving meals as necessary and on a timely basis.

Assists in food preparation for special meals, parties, etc.

Performs administrative requirements including forms, reports, etc., and submits to Dietary Supervisor.

Coordinates dietary service with other departments as necessary.

Assists in establishing food service production lines, etc., to assure that meals are prepared on time.

Prepares and serves substitute foods, when authorized, to residents who refuse foods served or request appropriate alternatives.

Prepares food for therapeutic diets in accordance with planned menus.

Prepares food in accordance with standardized recipes and special diet orders.

Inspects special diet trays to ensure they are correct.

Ensures food is prepared in accordance with sanitary regulations and that safety regulations are followed at all times.

Disposes of food and waste in accordance with established policies.

Follows established Infection Control policies and procedures.

Assists with scheduled cleaning duties in accordance with established policies and procedures.

Maintains food storage areas in a clean and orderly manner.
Maintains necessary equipment and supplies.

Reports immediately all hazardous conditions/equipment to Dietary Supervisor.

Reports all accidents/incidents as established by department policies.

Wears protective clothing and equipment when handling infectious waste and/or blood/bodily fluids.

Advises the Director of Nursing or other appropriate medical staff of any resident safety concerns (i.e. swallowing difficulties).

Utilizes proper body mechanics, transfer/lifting techniques and appropriate equipment to minimize injury to self.

EDUCATION AND/OR EXPERIENCE

High school diploma or equivalent.

One (1) year dietary experience in a hospital, skilled nursing care facility, or other related medical facility preferred.
